Frozen cubes of Rocoto, Red Peruvian One great way to preserve chile peppers for the winter is to mince them with a food processor and then freeze them with just a little water. When you want "fresh chili" during the winter, just add one of these cubes into your food while cooking and it will melt. Then just mix with properly. It'll be as close as fresh chile peppers as possible during the winter! Doesn't need any slicing etc. when you take it out of the freezer.
